Ice cream is a
fantastically delicious dessert, especially when it's homemade. All you
need as a base is (beaten) cream and sugar to taste. For a softer
texture, beaten egg white (pasteurized is safer!) and alcohol (only for
making it softer of course!) can be added. To this base you can add any
type of fruit (kiwi, papaya and pineapple should be heated briefly to
inactivate certain enzymes that can degrade proteins in the cream)
either in small pieces or as a puree. Or you can add molten chocolate,
ground nuts and whatever you can find in your kitchen.
We
use an ice cream machine for our ice cream. Our machine is cooling and
stirring at the same time. An alternative is a machine which has only a
stirrer and supplies the cold via a container that has been kept in the
deep freezer.
